A Leslie cube filled with very hot water lets you compare four surfaces at the same temperature.
Keep the detector the same distance from each face, and take readings at the same time.
Matt black is the best emitter of infrared; shiny silver is the worst.
Matt black is also the best absorber of infrared; shiny surfaces reflect it.
